For the end of 2024, master chocolatiers and pastry chefs are doubling their creativity to offer logs et chocolates exceptional. Combining refined techniques and contemporary flavors, each house highlights its unique know-how: from the Japanese influences of Edwart Chocolatier to the elegant creations of Pierre Marcolini, including the remarkable pieces of the Maison du Chocolat. These creations, thought out down to the smallest details, are all tributes to artisanal excellence and gourmet delights.

Edwin & Arthur, Edwart Chocolatier

It's an understatement to say that we love the work of this chocolatier whose Japanese influences and nods to childhood reinforce our capacity for wonder. Never mawkish, this year Edwart is showcasing the icy landscapes of the North Pole where penguins are kings, two of them - penguins Edwin & Arthur - first names of the brand's founders - are the mischievous stars of this Christmas 2024. The boxes are illustrated by tattoo artist Eddie Czaicki.

On the base garnished with Piedmont hazelnut praline, the ice floe contains coated hazelnuts and dark chocolate nibbles. The whole is made with 68% grand cru dark chocolate from Tanzania.

Piece of ice floe
Another tempting proposition: bite into a piece of chocolate ice floe. This 23 cm XL tablet, which looks like a chocolate ice floe, contains a Piedmont hazelnut praline combined with a deliciously tangy yuzu ganache.

The double World Pastry Champion has three creations to offer us, straight out of the enchanted landscape of his Gentleman des Neiges. Yule logs with a very traditional appearance but full of surprises with the flavors of our time.

The Caramel : its joconde biscuit, creamy and caramel Bavarian, pecan praline, white chocolate icing brings a wood effect.

Oviedo : still based on hazelnut joconde biscuit counterbalanced by a creamy Madagascar vanilla, milk chocolate mousse, hazelnut-lime praline, dark chocolate icing.

And finally The Flight, a log of intense chocolate: cocoa biscuit, orange cream, dark chocolate mousse, almond praline, dark chocolate icing with wood effect.

Gentleman of the Snows
Another piece that will look great on a beautiful table is the Gentleman des Neiges, a character that symbolizes Christmas, made entirely from homemade dark chocolate using exceptional beans from Ecuador and Sao Tomé.

Under this topic, 2 drawers full to bursting, the first with 36 truffles. The second with 36 chocolates with comforting and gourmet flavors.

Wind roses, The House of Chocolate

Nicolas Cloizeau, the house's pastry chef and chocolatier, excels in his art. In fact, he always impresses us with his know-how and great creativity, and this season is no exception.

So he declines his immense Rose des vents one piece at 3200€ the artistic piece of 6kg and 50cm high, (made in small series), in more reasonable versions. Like his small Roses des vents. On a base of almond-hazelnut praline and walnut paste with walnut pieces, Madagascar vanilla and crepe pieces lace stars worked in 56% dark chocolate and ivory 33%, are impressive.

The exceptional log
This pastry creation combines chocolate and nuts. It consists of a 68% dark chocolate mousse from Bali on a gluten-free biscuit with Périgord nuts. A creamy milk chocolate and a creamy vanilla walnut are combined with a walnut-vanilla praline. The whole thing rests on a layered chocolate base, topped with a milk chocolate bar garnished with caramelized nuts. A dark chocolate compass rose adds the finishing touch to this refined dessert.

Log Gyokuro, Sugarloaf pastry

True to their mastery of art and always very attentive to detail, Nathalie and Didier, the founders of this pastry shop, bakery and caterer, invite us to treat ourselves this Christmas with inspired logs. Despite the increase in raw materials, they have made sure to keep the 2023 prices.

State of shock reveals a crunchy Sacher biscuit followed by a hazelnut cream, a cocoa-soaked biscuit, a dark chocolate mousse and a cocoa glaze topped with caramelized hazelnuts.

Miss Marple is the result of the layering of a chestnut flour biscuit, hazelnut crisp, quince pulp, as well as sweetened homemade chestnut cream lined with a chestnut mousse and praline chocolate with Piedmont hazelnuts.

Tonka is delectable for lovers of chocolate, apple and sesame. Under a Genoa bread, here is a black and white sesame crisp, semi-candied apple pulp, a bourbon vanilla cream, a tonka bean mousse.

Gyokuro Matcha and pistachio dominate this Yule log with its Spanish pistachio biscuit, topped with a Matcha green tea cream, wrapped in coconut cream, with a Gyokuro green tea mousse.

If you have never tasted the products of this pastry chef who recently arrived in the Marais, this is the opportunity to rush to Johanna. This artisan has what it takes.

• His log Kasham (gluten-free) will drive chocolate fans crazy! It expresses an exquisite marriage between caramelized buckwheat, a chocolate joconde biscuit, an intense buckwheat praline, a sobacha chocolate caramel insert and a dark chocolate mousse. An explosion of chocolate flavors guaranteed.

The Winter Garden gives in to freshness, with its grapefruit biscuit, its clementine confit, its citrus crisp, its fromage blanc mousse and a whipped clementine ganache.

Frosted Vanilla as for it, it is a pure delicacy with its vanilla praline heart, creamy black vanilla and crunchy kadaif wrapped in a whipped ganache with smoked vanilla.

The famous Lille house has taken root in Le Marais by setting up, before the summer, on rue de Bretagne, its second Parisian store. This will complete the offer of their delightful first boutique on rue Elzévir. Like their logs.

This year, the exceptional piece is the Black Star, made with a soft chocolate biscuit, a 72% cocoa dark chocolate sabayon, a crème brûlée with Madagascar vanilla, a mixture of orange/passion fruit confit, a hazelnut cream, a crispy shortbread with hazelnut praline and coffee. All accompanied by a custard coulis.

Inside this magnificent case, you will discover a unique recipe combining intense 66% dark chocolate, on a crispy shortbread with caramel and Guérande fleur de sel, and a creamy praline with Piedmont hazelnuts.

For lovers of candied chestnuts, Fauchon has preserved their authentic flavor. Each fruit is sorted for its perfect shape and regular size. They undergo slow candied storage for 7 to 10 days in a delicate syrup flavored with Bourbon vanilla from Madagascar, followed by a satin glaze for optimal shine and texture.
