We can no longer imagine an outdoor lunch break “without its sandwich”. Long a commonplace snack, eaten on the go, the Marais restaurateurs have been able to revive our appetite for this street-food classic.

The new generation sandwich has everything to make us salivate and travel as there are versions from the most traditional to the most surprising.

To make sure you're not mistaken, our team of salty eaters invites you to taste the 5 must-haves of the moment.

The royal

Chez Alain Miam Miam – © Olivier Benier

Only half a filled baguette left, the sandwich served at Alain Miam Miam is an urban legend. At the counter of its stand at the Enfants Rouges market or in its estaminet, when the house draws up the list of organic and local ingredients, the lips excite.

Between two slices of perfectly toasted paved bread, the lively restaurateur indulges in all the compositions without ever compromising on quality.

At his house, the sandwich consists of ham, pastrami, chicken, etc. as well as smoked trout or Cantal and Comté AOP.

Don't panic, vegetarians or those who enjoy vegetables and condiments between two slices of cecina will be won over by the profusion of candied onions, mushrooms, crunchy salad, avocados and other seasonal pickles.

The character

Smoked ham sandwich – Pig character

If you think that buttered ham no longer has any taste, you will quickly devour the “gastronomic” version served without fuss at the charcuterie counter Pig character.

Its jovial owner has made this unfortunately neglected classic into an exceptional sandwich.

From the first bite you will be won over by the balance between the crispness of the golden baguette, the creaminess of the Bordier butter spread generously and the generous slices of farm ham, marbled Burgundy, smoked Vosges cooked with foutain or Provencal with rosemary, or even for traveling taste buds, Parma ham, Tuscan pepper with pepper, Iberian Cebo de campo or Hungarian Mangalitza…

Beware of addiction!

The exotic

special banh-mi with breaded shrimp… – Gramme – Photo: thesocialfood

For gourmets looking for an original street-food experience, rush to the counter at Gram, a micro canteen-grocery store where an astonishing creation called the “Banh Mi Dog” awaits you.

Halfway between the Vietnamese sandwich and the hot dog, here there is no baguette or white ham but an astonishing combination of over-sourced products by the duo at the helm of this hybrid coffee shop.

Bite without delay into the brioche bread from Le Petit Grain, the pulled pork from Viandes du Châteauneuf, accompanied by pickled vegetables marinated in the kitchen, all seasoned with homemade coriander mayo.

The succulent

Slow Cooked Beef Sandwich - Micho - Photo : enrangdoignons

Behind the counter Micho's, Julien Sebbag treats us to a hearty sandwich that we finish without being asked.

All the inventiveness of its Mediterranean cuisine is concentrated in a Halla, brioche bread in XL format.

In this braid signed Babka Zana, we find a choice of three versions of her Israeli recipes reinvented with panache: Extra-soft simmered beef stew accompanied by sweet potatoes, red cabbage, hazelnuts, parsley, and paprika thina. Roast chicken roasted with rosemary, salad, fennel, radish, black garlic aioli, soft-boiled egg and spring onions. And because you need one, the cauliflower vegetarian with grilled cauliflower, with pickled red onions, dill pesto, mint, pine nuts and Greek yogurt.

Unavoidable !

The explosive

Ham stuffed with truffle, melted morbier… - Boulotte - Photo : clemarot

If you thought you were back from all the takeout dining experiences, well you were wrong.

At the counter of Boulotte, Pauline and Hugo not only offer an excellent classic with seasonal flavors and colors, all homemade.

Hugo, a certified chef who can be seen behind his stove, creates unique compositions of tasty, crunchy and creamy foods, carefully sourced by Pauline from exceptional small producers.

Between two slices of bread prepared by their baker, anything becomes possible. Under the soft crumb, the fondant of a ham from Tarn or Parma, the tenderness of a meat from Limousin, the power of a cheese from Savoie, Normandy or Italy and finally, the freshness of organic vegetables from their market gardener from Ile de France.

To try without further delay!

Vegetarian restaurant: Bonnard, it’s all good!

Divine brunch at the foot of Notre-Dame

Divine brunch at the foot of Notre-Dame

Of course, officially, it is not the Marais. But at Son de la Terre, a barge recently moored at the Montebello quay (5th), the 4th arrondissement is in sight. Moreover, this one is incredible: on one side, it is Notre-Dame flooded with sunlight; on the other, the quays, the book sellers, the walkers, the joggers.
