The task was therefore not easy. With his young family team, the newcomer took on the challenge with flying colors, to the great relief of the neighborhood's residents.
The welcome is warm and the quality products come directly from the producers via Franck Gratiot, a famous agent at the Rungis market whose reputation is firmly established.
A fine gourmet, the new cheesemaker on Rue Rambuteau, aged 37, has his own preferences: 24-month Comté, Reblochon, Gabarre (a raw milk goat's cheese), “three refined products”.

But in this country with 258 varieties of cheese - France - its selection is obviously wider: truffled brie, briquette, fresh goat's cheese, coulommiers, Perche clover, sheep's tomme, etc. Also on the menu: the famous Bordier butter from Saint-Malo and a little cold meats, “to help out”. “And soon, we will launch snacking, with a menu renewed every day which will include croque-monsieur,” specifies the thirty-year-old cheesemaker.
