A famous Parisian bistro whose origins date back to the 19th century, this institution is known for its location (under the arcades of the Place des Vosges), its warm atmosphere, its simple and authentic cuisine (with a “signature” steak tartare), its cellar but above all for Thérèse and Aimé Cougoureux, who ran the establishment for more than four decades.
This couple from Aveyron have managed to preserve the soul of the place by retaining the character of what was a stable (in 1807) then a grocery store and, finally, an inn, then a restaurant with an indoor room with 40 seats and a terrace with 60 covers.

Ma Bourgogne is also known for its famous clients, including actors Michel Blanc – “a friend of the house who came several times a week, as a neighbor” says Aimé –, Francis Blanche, Tim Roth, Sami Frey, Annie Girardot, Delphine Seyrig, Jean-Claude Brialy and Philippe Léotard. The director Claude Chabrol, the Minister of Culture Jack Lang and the King of Sweden Carl XVI Gustav were also regular customers.
After having taken their final bow on the evening of November 24, it was a young couple, Constance and Maxime Mauras, who entered the scene, we learned. The Auvergne of Paris, the profession's newspaper: "The essential is preserved. My Burgundy will not lose its soul. Constance and Maxime are determined to follow in Thérèse and Aimé's footsteps. Neither the team of 15 people, nor the offer, nor the suppliers will be modified." Phew!
Maxime Mauras, already owner of Pachyderme on Boulevard Saint-Martin, very close to République, sees in Ma Bourgogne his “flagship” and an opportunity to live his passion for gastronomy.
"Aimé is very fond of Beaujolais wines, we will probably bring more Burgundy to better match the brand," explain the new owners. My Burgundy has not said its last word.
