Who says better ? A return trip to Cuba in economy class (or “economy ice cream”) for 3,50 euros: this is the taste journey offered by Jean-Pierre Braun with his Rêve de Cuba, an intense vanilla ice cream with old amber rum (7 years old). 'age) and lime, all smoked with Havana! An astonishing success. “It’s like drinking a caipirinha in a cloud of cigar,” explains the ice cream maker, amazed by his own composition.

Here is Reÿs, eternal ice cream, a new ice cream parlor installed on rue du Bourg-Tibourg (between rue de Rivoli and rue de la Verrerie) which joins the other sorbet and ice cream sellers in the Marais (Pozzetto, Mustache, etc.).

The brand's credo? Zero industrial ingredients, often organic fruits, whole vanilla, unrefined organic sugar.

“Our ice creams and sorbets are evocations of travel; I treat them like a gourmet recipe or a perfume. They tell a story, an emotion,” explains Jean-Pierre Braun, this “neo ice cream parlor” who worked in restaurants and luxury hotels (Plaza Athénée, Auberge de la Vieille Tour in Guadeloupe).

Its recipes, it is true, are enough to disorient passers-by. Dragon's Kiss? A red dragon fruit sorbet, lapsang souchong infusion, Sichuan peppers (China) and white dragon pepper (Vietnam). The Walk in Bangkok? A vegetable milk ice cream that results from cooking fragrant Thai rice in coconut milk infused with fresh lemongrass.

The Indian Wedding? Green pistachio from Bronte enhanced with cardamom and rose water. The Cretan Tsatsiki? A sweet and sour composition based on Greek yogurt, cucumber, olive oil, lemon, mint and… garlic! Afternoon in Collioure? A sun-kissed peach sorbet washed down with Languedoc rosé wine.
