There are almost as many varieties of rice as there are days in the year: 360! And they all combine the qualities that make this cereal rich: energetic, gluten-free, source of fiber, vitamins and regulator of intestinal transit.
At Horiz, the chic and affordable address which opened at the end of 2022, at the corner of rue au Maire and rue Volta, in the Chinese district of Marais, rice accompanies all dishes in one way or another.
Alexandre Lin, former pastry chef at the Four Seasons and at Cyril Lignac, with his brother Oliver at his side, who worked in the kitchen at Capitaine (4th arrondissement), took over the address of their parents from Wenzhou (south-east of China) to transform it into a Sino-Parisian canteen.
They serve vegetable rolls (€6), marinated eggplants (€8), Sichuan style spicy beef (€16) or even chicken caramelized for 48 hours and flambéed before our eyes (€14,5).
On the menu of this “rice concept” with modern and refined decor – exposed stone walls, wooden chairs and tables – the eye stops on the “Harmony of 6 spices”, an essential seasoning technique in China based on a subtle blend of cinnamon, coriander, fennel, star anise, cloves and Sichuan pepper which enhance meats or shrimp.
We also like bings. Veggie bing, traditional bing, bing of the month: whatever the bing, it’s €12,5 for all three! But what exactly is a bing? “Nuomi bing is a flat rice cake stuffed with meat and vegetables that comes in the form of a practical and easy-to-eat taco,” explains Alexandre.
