Our 2023 selection reveals delicious pancakes, 100% artisanal, made according to the rules of the art, all “made in the Marais”, except that of Jean-Paul Hevin from his laboratory in Bois-Colombes. They are sweet but not overly sweet and come from houses renowned for their know-how. This year, the cost of butter, almonds and electricity are weighing on prices. But, inflation or not, tradition is good.

The most traditional comes out of the oven Around the bread. This small neighborhood bakery is on fire, with its perfect flaky croissants, its crunchy traditional baguette and its good value for money pastries. The same goes for the pancake with perfectly mastered puff pastry and its ultra generous almond cream. Cake for 6 people: from 27 to 30 €.

Bogato pancake

The cutest comes from Café Bogato, the brand new coffee shop of the excellent festive patisserie Bogato known for its shortbreads, its cupcakes and its magical and beautiful cakes which delight young and old. This year it's a fantastic combo: frangipane, chocolate and pecan hidden in their pancake served by the slice. Also available whole but in only one size: pancake for six. Cake for 6 people: €36.

Galette by Jean-Paul Hévin

The most arty is designed by Jean-Paul Hévin. The former best worker in France is big in Japan, where he employs more people than in France. This chocolatier's cake is stunning. We like the almond cream which is hidden under two layers of puff pastry: one plain, the other chocolate. Everything is “pimped” with tangerine marmalade. Cake for 6 people: €37.

Galette from An Ice Cream in Paris

The frostiest is made by Une glace à Paris, a house whose chef Emmanuel Ryon is the best worker in France Glacier. With his partner Olivier Menar have fun surprising us with their frozen desserts. Their frozen galette is a beautiful UFO composed of almond ice cream with bits of caramel, sandwiched between two discs of puff pastry. And all bordered with a Norwegian omelette ribbon. Frozen pancake for 6 people: €48 (unfrozen: €36).
