Here is one of the signature pastries of Chou français, a new sweet and single-product address, very close to the BHV.

“The pastry cream of my choux crackers is rich in egg yolk,” explains Florian, the pastry chef and owner of the place. “So I end up with lots of egg whites. However, the pastry chef is a perfectionist who cut his teeth in several renowned houses before specializing in choux pastry. “I only work with AOP butter, flours from the Grands Moulins de Corbeil, in Essonne (91), and shell eggs, which is rare in pastry,” specifies this slightly obsessive enthusiast who admits: “I only uses fresh products, I do everything the same day in my laboratory in Seine-et-Marne (77) and I deliver the same morning. My cabbages have a certain price, so they must be impeccable. » The classic Chou is 2€90 and the Choucaron is 3€90.
