“The pastry cream of my choux crackers is rich in egg yolk,” explains Florian, the pastry chef and owner of the place. “So I end up with lots of egg whites. One day, I had the idea of ​​making macaroons and combining them with my choux buns. My wife loved it, the recipe was born. » When tasting: lemon-basil is present; the vanilla cabbage is rich and the Madagascar vanilla explodes in the mouth.

Lime basil ganache and heart of fresh raspberries, caramelized pears and chestnut cream ganache, and even tiramisu, these are the few offerings from the “Chouroom” of Chou Français where Florian warmly welcomes each customer, sometimes with humor and above all… without worrying.

However, the pastry chef is a perfectionist who cut his teeth in several renowned houses before specializing in choux pastry. “I only work with AOP butter, flours from the Grands Moulins de Corbeil, in Essonne (91), and shell eggs, which is rare in pastry,” specifies this slightly obsessive enthusiast who admits: “I only uses fresh products, I do everything the same day in my laboratory in Seine-et-Marne (77) and I deliver the same morning. My cabbages have a certain price, so they must be impeccable. » The classic Chou is 2€90 and the Choucaron is 3€90.
