In the Chinese district of Marais, in the middle of rue des Gravilliers, a small, discreet counter has just opened: LAVA Choux Studio. The tone is set. Here, choux pastry is king. Savory version in a reinterpretation of the gougère or savory in éclair or cream version.

We feel a strong Asian inspiration there and for good reason, Joanne, the creator of the place, is originally from Hong Kong. After a career in real estate, she followed her husband to Paris and then launched into the restaurant business. She decides to take up the codes of Asian street food, while highlighting this French classic that is choux pastry.

Special feature of the place: everything is “assembled” minutely, so that the cabbage is not softened by the preparation and keeps its “soft inside and crispy outside”.

Recipes are developed by Sky. Self-taught, this cook and pastry chef trained in restaurants before taking the reins of Lava. She masters plated desserts as well as savory recipes.

That day, we let ourselves be tempted by a vegetarian cabbage dog with tender eggplant and chicken satay. Two real dishes, served in a cabbage, perfectly seasoned and accompanied by a comforting soup, which still leaves enough room for dessert, an essential stopover at home.

The fig cabbage, hay cream, fig compote, blackcurrant gel and coconut crumble is fresh; the one with mango cream, Sago pearls (which come from the Sago palm), grapefruit and coconut ice cream is astonishing.

Satisfied, we promise to come back for a matcha, a pistachio or a vanilla speculoos.
