From the outside, we notice nothing, except the regular flow of customers – mostly women, but not only – who enter and leave the Bar Bol, in the Marais, in Paris. So we open the door to this new address, at the top of rue des Archives. We order a bowl, and there… surprise! Full to the brim with healthy products and almost all organic, each dish is a festival of flavors that give a slap in the face to usual fast food restaurants. Enjoy it seated in the pretty decor of natural materials adorned with a large painting by Richard Orlinsky.

The secret of the house is that the menu is created by a three-star chef, Philippe Legendre, who worked at Taillevent and the Georges V. It is he who created five signature recipes based on sea bream, salmon, bluefin tuna, roast chicken, smoked pollock or tofu to suit vegetarians and vegans.

Samy and Philippe, the two founding friends of Bar Bol (who have another establishment on the left bank), have evolved the recipes and complete their offering with a noodle broth, mushrooms, corn, chicken or tofu, marinated egg. There is also a beetroot rice burrito which received the votes of the Marais Mood team: 10 out of 10. We want more! And we're going back soon.
