Amami, which means "popular" or "simple" in Hebrew, is inspired by Jewish cuisine from the Maghreb to the Middle East, but also from Eastern Europe. Spiced up with oriental spices (zaatar, labneh, sesame, sumac, tahini, paprika, cumin, etc.), the recipes pay homage to the chef's grandmother, from whom he learned to boost morale at all times and in all seasons with generous, family dishes.

First, we lick our lips with tapas: tarama with lightly grilled notes, a plate of tingling red peppers, braised cabbage accompanied by a punchy tahini, a plate of falafels, a tasty hummus without acidity or bitterness.
