This year, the House Herme Dive into an almost dreamlike marine world. An odyssey reminiscent of Jules Verne, populated by corals, anemones, and sea sponges. The Abysses collection was built around a dialogue between Pierre Hermé and the ceramic artist Courtney Mattison, whose monumental stoneware and glazed porcelain sculptures inspired the pastry shapes, textures, and volumes.

At the heart of this artistic and culinary correspondence, the Anthéa's signature yule log A dessert whose silhouette evokes coral reefs, all delicate undulations. Inside, an intense marriage of Pure Origin Belize dark chocolate, Cayo District (Xibun Plantation), pistachio, and a touch of fleur de sel that enhances the whole without overpowering it. A rich, sophisticated creation that plays with depth as much as with sweetness.

For Christmas 2025, Ladurée unveils an exceptional creation conceived by Julien Alvarez, Head of Pastry Creation. This year, the creations, made in collaboration with the artist Daria SongThey draw inspiration from the Garden of the Hesperides — a garden from Greek mythology — and celebrate the apple in all its forms, from gourmet sculpture to refined dessert.

Beneath its delicately gold-leaf-adorned dome, a vanilla biscuit with muscovado sugar rests on a crisp buckwheat base, topped with melting apples, a creamy, flowing salted caramel, and a light vanilla cream. Each element is conceived as a variation on the theme of the golden fruit: apple for generosity, caramel for opulence, buckwheat for warmth, and vanilla for sweetness.

The base holds an additional surprise: macarons — a signature of the Ladurée house — from the Christmas collection, accompanied by hazelnut pearls coated in vanilla, which extend the indulgence to the last detail.
