This creation, centered around Morello cherries, evokes the tastes of childhood. Maman Cherry stands out as a pastry that strikes a perfect balance between indulgence and freshness.

A delicately sweet and buttery shortcrust pastry rests on a soft almond cream dotted with morello cherries, providing an initial touch of tartness. Next comes an intense morello cherry confit, which structures the whole and underscores its fruity depth. The tasting experience continues with a lightly caramelized Chiboust cream, subtly flavored with verbena, which adds a floral and airy dimension. The finishing touch is a fresh morello cherry, perfect for biting into, which completes this vibrant and elegant heart-shaped creation, conceived as a play of textures and contrasts around the red fruit.
